Lavender Cupcakes & ‘The Hummingbird Bakery Book’ Review

My mum is always appearing at my door with weird and wonderful ingredients she finds in Waitrose, and this was no exception…edible lavender flowers.

What do you do when you’re given edible lavender flowers? Make cupcakes!

I received this Hummingbird Bakery cupcake book as a present quite recently and it provided the perfect recipe. It uses a great technique to add a subtle hint of lavender by infusing the buds in milk, which are then strained off prior to baking. The final result was indeed a subtle, fragrant flavour that reminded me, oddly, of those microwavable bears when they were cooking. Delicious! The contents of my fridge now have an interesting aroma too.

The beautiful photography and inspiring flavours really got me wanting more so I dug a little deeper and discovered a full sized recipe book from the london-based bakery. It includes pies, cakes, loafs and cookies. I bought it straight away! The cupcake recipes are duplicated in the big book but there’s enough new recipes in it to make it worth the purchase, and the little one is perfect for taking to the supermarket . The recipe’s are quick and easy to follow and capture everything I love about baking; it’s really not that hard! The Old Brompton Road branch looks the most inviting of the four bakeries, definitely on my to-do list when I’m next in London town.

*Edit: The follow-up book, Cake Days, is out now, I’ve not sampled it but it looks just as scrummy as the first.
